A kitchen appreciation fee is an additional charge, typically 2-5%, added to a restaurant bill to compensate back-of-house (BOH) staff, such as cooks and dishwashers, who traditionally don't receive tips. This fee aims to bridge the wage gap between front-of-house (FOH) and BOH staff and is separate from tips intended for servers.
